The secret to the Bradley Smoker is the Bradley Flavor Bisquettes. The bisquettes are bound, at controlled pressures and densities, from chippings of natural hardwoods and fruitwoods which results in a consistent and predictable burning behavior. The smoker burns a flavor bisquette once every 20 minutes producing a clean smoke flavor. As each is burnt, it is gently pushed from the burner element by the next bisquette, to be extinguished in the bowl of water. When wood burns, the smoke flavor is produced in the initial minutes of the burn. Wood that has been burning for too long, or at too high a heat, will dramatically distort the flavor of the food being smoked. The aftertaste can be acidic or bitter. The Bradley Smoker also utilizes a unique system of consistent temperature settings to aviod high temperature gasses, acids or resigns that would distort the appearance or flavor of your smoked foods. This means a great, smoked flavor with no aftertaste. The independent internal heating element ensures consistent smoking for up to 8 hours. Consistent and controlled levels of temperature and smoke translate to a superior food product. Temperatures can be set between 140° to 320° F.
